Jamaican Spinach Patties, aka Callaloo Patties

Ingredients
  

For the filling

  • 4 cups spinach, chopped
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic
  • 2 green onions
  • 2 sprigs thyme
  • 1 medium tomato, chopped
  • Salt to taste
  • 1/4 tsp cayenne pepper
  • 2 tbsp water

For the crust

  • 2 cups all-purpose gluten-free flour
  • 1/2 cup almond flour
  • 1/4 cup ground flax seeds
  • 1 tsp curry powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup butter
  • 1 cup cold water

Instructions
 

To make the filling

  • Rinse and drain the spinach
  • In a pan, add the oil and heat it
  • Add the onion, garlic, spring onion, thyme, tomato, and cayenne pepper 
  • Cook until onion is translucent
  • Add the spinach and water, cook on low heat until wilted
  • Mix everything together to combine properly
  • Turn off the heat and allow the filling to cool completely

To make the crust

  • In a bowl, combine the flour, almond flour, flax seeds, salt, curry powder, and baking powder
  • Mix it all together
  • Add the butter and cut it into the flour using a pastry cutter or your fingers
  • It should be dry and crumbly for now
  • Add cold water and mix it to form a dough ball
  • Cover the dough and keep it in the refrigerator for 30 minutes

To make the patties

  • Preheat oven to 400F and line a baking sheet with parchment paper, spraying lightly with oil
  • Take the dough out of the refrigerator and divide it into eight pieces
  • Roll out each piece into a circle
  • Place a heaping tablespoon full of the prepared filling in the center of the circle
  • Fold in half and press down the sides using a fork to seal it in
  • Once the dough is filled, place the prepared patties onto the baking sheet
  • Bake for 20-30 minutes or until golden brown
  • Take out of the oven and serve while warm!
