  • cup Melted Butter. 100g
  • ¼ cup Caster Sugar. 50g
  • 3 Eggs.
  • ½ Lemon Juice and Zest.
  • 1 cup Almond Meal. 100g
  • 1 pinch Salt.
  • cup Plain Flour. 110g
  • 1 tsp Baking Powder.
  • Icing Sugar. For dusting

Instructions
 

Recipe Preparation;

  • In a small bowl, melt the butter and set it aside to cool.
  • In a large mixing dish, add eggs and sugar and beat together for a few minutes, or until doubled in size and frothy. Next, pour in the cooled melted butter and thoroughly mix it up.
  • Combine the Almond Meal, Lemon Zest, and Lemon Juice into the prepared mixture.
  • In a separate dish, whisk together the baking powder, flour, and salt. Sift it into the batter and thoroughly combine. Chill it in the fridge for about 15 minutes.
  • Preheat the oven to 230 degrees.
  • Then, spray the Madeleine Pan with Canola Oil, or brush a little butter into it while the oven is heating up.
  • Fill each shell with roughly a spoonful of batter. About two-thirds of the way full is ideal.
  • Once the oven is hot, put the Madeleines in the oven and immediately decrease the temperature to 170 degrees.
  • Allow baking for 8 to 10 minutes.
  • Place onto a wire cooling rack and allow to cool down completely.
  • Dust with icing sugar for perfection.

Note: Before you put the Madeleines in the oven, make sure it's really hot: the heat is what causes the center of the Madeleines to rise. To avoid burning your Madeleines, adjust the temperature of your oven accordingly.
