- ½ cup Brown Rice Penne Pasta
- 2 cup Broccoli Chopped
- 1 cup Kale Chopped
- 2 cloves Garlic Minced
- 2 tsp Olive Oil Extra-Virgin

InstructionsÂ
- Bring a pot of salted water to a boil. Once the water is boiling, add in pasta and cook pasta for 3 minutes
- Drain pasta and rinse with cold water (this helps the pasta from overcooking). Save half of a cup of the pasta water
- Steam broccoli for about 5 minutes
- Add olive oil to a preheated pot. Add minced garlic
- Add in broccoli, pepper, and half of the salt. Sauté for a few minutes
- Add the kale and pre-cooked pasta, along with 1/2 tsp of olive oil and the remaining salt.
- Cook together for 3 minutes
- Drizzle with 1/2 tsp of olive oil and serve.
