- Preheat oven to about 350°F or 175°C.
- Get a large bowl ready. Then add your softened butter, white sugar, brown sugar, and mix until a smooth cream forms.
- Beat in your eggs and mix with a whisker. Add water and almond extract, mix well.
- In the same large bowl, add all-purpose flour, baking powder or soda, chopped almonds, and salt, then mix. Stir in your coconut flakes and white baking chips into the creamy mixture.
- Roll the thick, creamy mixture into a round dough and set it on the cookie sheet, leaving a space of about two inches between two doughs.
- Flatten the dough with a fork. Place the cookie sheet in the preheated oven and bake for about ten minutes until the cookie edges turn light brown.
- Cool the freshly baked coconut almond cookies for about five minutes before transferring them to a wire rack.
- To prepare the glaze, pour 3/4 cup white baking chips and the shortening into a small bowl. Please place it in a microwave for about 2 minutes, stirring every thirty seconds until fully melted.
