  • 50 ml olive oil
  • 1/2 medium / large onion
  • 1 clove garlic
  • 250 g mushrooms
  • 200 g red beans
  • 1/2 can coconut milk
  • 2 tsp medium curry powder
  • 100 g fresh organic baby spinach
  • Juice of half a lemon
  • Salt and pepper to taste
