Everyone is including kale in thier vegetarian and vegan diets. It’s also a favorite for those watching their weight and trying to shed a few pounds. Today we’ll be making the Hillstone Kale Salad Recipe.

Hillstone Kale Salad Recipe

  • 3/4 cup peanut oil
  • 1/4 cup rice wine vinegar
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 2 tsp black pepper
  • 1 tbsp dry mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1 tsp water
  • 2 tsp garlic powder
  • 2.5 cups curly kale, chopped (bite-sized pieces)
  • 1.5 cups green cabbage, shredded
  • 10 mint leaves, chiffonade
  • 1/4 bunch fresh cilantro leaves, finely chopped
  • 3/4 cup unsalted dry-roasted peanuts, finely chopped
  • 1/2 cup whole dry roasted peanuts
  • 1/2 cup parmesan cheese, grated


  • Combine the ingredients for the dressing together in a jar and shake until blended 
  • Place the kale, cabbage, mint, cilantro, and chopped peanuts in a bowl and toss well with the dressing 
  • Let sit for 5-10 minutes to allow the flavors to blend
  • Sprinkle the whole dry roasted peanuts and parmesan cheese just before serving

The Hillstone kale salad recipe is a simple dish to make. If you want it to be more filling, you can add chicken or any meat of your preference.
