Honor Bar Kale Salad Recipe
Ingredients
For the salad
- 10 oz kale, shredded
- 1.5 cups coleslaw
- 1 lbs boneless chicken, shredded
- 1 cup freshly chopped mint leaves
- 1 tbsp olive oil
- 1 tsp sea salt
- 1 tsp black pepper
- 1/3 cup parmesan cheese
- 3 green onions, sliced
For the peanut dressing
- 1/4 cup peanut oil
- 1 tbsp rice wine vinegar
- 1 tbsp sesame oil
- 1 tsp soy sauce
- 1 tbsp honey
- 1/2 tsp cayenne pepper
- 1 tsp black pepper
Instructions
- Slice the boneless chicken into small cubes and cook in an instant pot for about 9-12 minutes
- Add in salt and black pepper as per taste
- Once cooked, shred the chicken with a fork and set it aside
- Take a large mixing bowl and add chopped kale along with other ingredients
- Toss everything together
- Add parmesan cheese
- Mix all the ingredients for the peanut dressing and store in an airtight container
- Pour in the dressing at least 20 minutes prior to serving so the dressing is nicely immersed into your salad
- If any of the dressing is left, you can serve it on the side
- Lastly, garnish with peanuts
- Enjoy!

Storing The Kale Salad
