Now there aren’t a lot of cakes you can make as a healthy dessert and still have it taste good somehow. Zucchini cakes and all that? No. I mean you can’t just make a cake with vegetables and call it the same thing, that’s not okay. So instead of substituting unhealthy ingredients, just make a cake with healthy ingredients, like the IKEA Almond cake recipe.
Let’s make it shall we!
IKEA Almond Cake Recipe
Ingredients
To make the almond sponge
- 1 cup almond flour
- 3 egg whites
- 1/4 tsp cream of tartar
- 1/3 cup granulated sugar
To make the almond cream
- 1/4 cup granulated sugar
- 3 egg yolks
- 1/4 tsp sea salt
- 2 tbsp dry milk powder
- 1 tsp vanilla extract
- 100 ml heavy whipping cream
- 1 tbsp unsalted butter
For the Garnish
- 1/2 cup almond flakes
Instructions
To make the almond sponge
- Preheat oven to 350F or 177C
- Line 2 6” inch round pans with parchment paper and grease lightly
- Separate the egg whites from the egg yolks and place them both in separate bowls
- In a mixing bowl, add the egg whites
- Whisk the egg whites with an electric mixer until it starts to become foamy
- Now add the cream of tartar and continue whisking
- Gradually add the sugar and whisk until stiff peaks begin to form and it looks glossy
- Stop whisking
- Now add the almond flour and fold it into the egg white meringue until incorporated
- Transfer the batter into the round pans, carefully dividing into the 2 pans
- Place the pans into the oven and bake for 20-25mins
- To check, insert a toothpick in the center of the cake if it comes out clean, it’s done baking
- Once baked, take out the pans and place them on a cooling rack to cool
To make the almond cream
- In a glass bowl add the egg yolks you separated earlier
- Also add the sugar, salt, vanilla extract, and milk powder
- Whisk everything until incorporated
- Now take a medium saucepan and place it in medium heat
- Add the heavy whipping cream to the saucepan and heat it up
- Once the cream is hot, add it to the egg yolk mixture while whisking simultaneously
- Now add the whole concoction back into the saucepan
- Continue whisking for 8-10mins until the mixture begins to thicken
- Once thick, remove from heat and add the butter to it and mix it in
- Transfer it to a bowl and place it in the refrigerator for 6 hours
- After 6 hours, take it out of the refrigerator and transfer it to a mixing bowl
- Using an electric mixer, whisk the cream until it appears lighter (2-3mins)
To assemble
- Cut each cake into equal halves
- Take one half of the cake and scoop some of the almond cream onto it and spread it
- Place the other half of the cake on top and repeat the process until all 4 layers are coated with the almond cream
- Add the almond flakes on top and on the sides
- Place the cake in the refrigerator and chill for 6-8 hours
- Serve while frozen and chilled!
Now wasn’t that simple! Healthy eating or not, who doesn’t love cake? I know I do. One of the things I miss the most on my clean-eating journey has ought to be cake.
