Joey’s Peanut Butter Cookie Recipe
Ingredients
- 1 cup creamy peanut butter
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1.5 cups all-purpose flour
- 1 large egg
- 3 tbsp milk
- 1 tsp vanilla extract
- 3/4 tsp baking powder
- Pinch of Himalayan salt
Optional Add-ins
- 1/2 cup finely chopped peanuts
Instructions
- Preheat your oven to 375 degrees F
- In a large bowl, whisk the egg and butter till they are frothy
- Add peanut butter and continue to mix till smooth
- Add white and brown sugars to the cookie dough, blend well
- Once the batter has smoothened out, carefully pour the milk and vanilla while continuously whisking to avoid spillage
- Stir in the flour gradually, whisk it all into the batter making sure there are no lumps
- Lastly, add salt and baking powder to the batter
- Whisk for 5 minutes or with an electric mixer at high speed for a 2 minutes
- With a tablespoon, take out the batter and roll them into balls
- Place the cookies onto ungreased trays, 2 inches apart
- Press the tops of the cookies with a fork
- To bake the entire batter you will have to bake in 2 to 3 shifts
- Place the tray into the oven and let the cookies bake for 10 minutes
- Once the edges of the cookies start to brown, remove them from the oven and place them on a wire rack to cool
- If you’re using chopped peanuts, sprinkle them over the uncooked cookies before placing them in the oven

- You can freeze the uncooked cookie dough for 1 week and bake them whenever you need to
