I absolutely love cookies! Won’t be lying if I say I legit inhale cookies on my cheat day. I know I know, cookies don’t exactly classify as salad no matter what I tell myself, but a little indulgence never hurt anyone right? After countless tries and some failures later, we finally have it, the Subway peanut butter cookie recipe!
Be wary of the baking times, it makes all the difference in terms of texture!

Subway Peanut Butter Cookies Recipe
Ingredients Â
- 1 cup peanut butter, better to make your own
- 4 oz butter
- 1/2 cup vegetable oil
- 1.5 cup brown sugar
- 1/4 cup granulated sugar
- 2 eggs room temperature
- 2 cups all purpose flour
- 2 tsp baking soda
- 1 tsp salt
- 1/4 cup peanuts, chopped (optional)
InstructionsÂ
- In a large mixing bowl, add the butter, oil, peanut butter, and sugars
- Mix using an electric mixer, for 2-3 minutes until pale and fluffy
- Once mixed, add in eggs one at a time
- Mix until well incorporated
- In a separate bowl, combine the flour, salt, baking soda and mix to combine
- Add the chopped peanuts (if using) to the flour mixture and mix
- Gradually add the dry ingredients to the butter-sugar mixture, folding it in using a spatula
- Once combined, place the dough in the refrigerator for 20-30 minutesÂ
- Meanwhile, preheat the oven at 375F or 190C
- Spread a baking sheet or parchment paper on a baking tray and spray with oil
- Once the dough is refrigerated, take it out and scoop the dough into 25-27 equal portions
- Place them wide apart on the baking tray (since they will expand!)
- Bake for 11 minutes or until you can easily pass a spatula underneath the cookie
- Once baked, take them out of the oven and place them on a cooling rack before transferring them onto a plate or storage container
Cookie baking tips!
- Always make sure that you take the time to cream your sugars and butter adequately! This will ensure that your sugar melts into the cookies and there are no granules in the end product
- Freezing the cookie dough is a crucial step that a lot of people tend to skip! It adds to the flavor and prevents the dough from spreading too much, yielding thicker cookies
- Use a silicone mat to bake your cookies! This too prevents the dough from spreading too much
- Be wary of the temperature! If a recipe calls for a certain temperature, stick to it! If you’re changing the temperature, you need to adjust the cooking time accordingly
- Your cookies will be a little wobbly when fresh out of the oven. That’s fine! They continue to cook while they’re hot
- Make sure each cookie is widely spaced apart! You don’t want 4 cookies morphing into a giant pancake in the oven
- I recommend baking one batch at a time on the center rack, to prevent any cooking differencesÂ

The Best Cookies Ever!
While I love my cake and ice cream, cookies will forever hold a special place in my heart. Just something about biting into that ooey-gooey goodness makes me happy inside out. And sometimes, being happy equals being healthy.
When it comes to cookies, I love them in all shapes and sizes, in all flavors and textures. For as long as I can remember, Subway used to be my go-to stop at the food court just so I could snag a cookie with my meal. Those cookies are the OG when it comes to picking favorites.Â
I loved them all, the chocolate chip, double chocolate, and of course, the peanut butter! Boy, are those peanut butter cookies addicting! My wallet can’t obviously sustain my cookie addiction. Especially if you’re in the habit of eating 2 in one go (or 5, who’s counting?!). So I knew I HAD to recreate the recipe at home.
A cookie recipe that’s close to subway peanut butter cookies. I used my homemade peanut butter for this recipe (since it’s cheaper and healthier) but you can obviously use store-bought if you prefer.Â
