TGI Fridays Chocolate Peanut Butter Pie Recipe
Ingredients Â
For the crust
- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/3 cup smooth peanut butter
- 6 tbsp butter, melted
For the chocolate ganache
- 2/3 cups heavy whipping cream
- 1/4 cup chocolate chips
For the peanut butter mousse
- 4 oz cream cheese, softened
- 1/4 cup smooth peanut butter
- 1/4 cup heavy whipping cream
- 1 tbsp butter, softened
- 1/2 cup confectioners sugar
- 1 tsp vanilla extract
Optional add-ins
- 1/2 container cool whip softened
- 5 Reese's’ peanut butter cups, crumbled
InstructionsÂ
For the crust
- Preheat your oven to 350 degrees F
- Line a 9 inches pie pan with parchment paper or lightly grease with oil
- You can crumble your graham crackers in a food processorÂ
- In a large bowl, add the processed crackers and melted butter, mix together with a spatula
- Add sugar and smooth peanut butter to the butter mixture and combine with a spatula, the crumb mixture should stick together
- Press the crumb mixture in the pie pan with the back of a spoon till smooth and even
- Place the pan into the oven and bake for 10 minutes
- Once the crust is firm remove it from the oven, smooth out any bubbles on the surface with the back of a spoon
- Let the crust cool
For the chocolate ganache
- In a saucepan, heat the whipping cream over medium heat
- When the cream starts to bubble up, add the chocolate chips and start to mix them
- The chips should melt into the cream, and the ganache should look smooth
- Pour the ganache over the cooled crust, spread it with a spatula to even out the surface
- Place the pan into the fridge to let the ganache cool
For the peanut butter mousse
- In a large bowl, beat the cream cheese with a hand mixer till soft peaks form
- Add the peanut butter, vanilla, butter, and sugar one at a time to ensure smoothness
- Once all the ingredients have been added, mix the mousse for 2 minutes at high speed
- Take the cooled crust and ganache out of the fridge and evenly spread the mousse over it with a spatula
- Lastly, add cool whip and crumbled peanut butter cups if using
- Serve chilled!
