It’s a crowd pleaser so when I’m expecting guests, I make this TGIF spinach artichoke dip copycat recipe. You too can prepare it at home (even in the microwave!). It’s extremely easy and tastes just as good as the original. So, let’s begin!

Ingredients
  

  • 10 oz spinach
  • 14 oz artichoke, chopped
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup mozzarella cheese, cubed or shredded
  • 1.5 tsp garlic, minced
  • Salt and black pepper to taste

Optional add-ins

  • Tomatoes, diced
  • 1 piece bell pepper, chopped

Instructions
 

  • Preheat the oven to 325°F (or 160 °C)
  • Lightly grease a shallow casserole dish. Or spray with non-stick cooking spray
  • In a medium mixing bowl, combine and stir together the sour cream, mayonnaise, parmesan cheese, mozzarella cheese, and garlic
  • Stir in the spinach and artichokes
  • If using fresh spinach, steam it and blanch in ice water 
  • Then, squeeze out the liquid, chop, and add it to the mixture
  • Pour the combined mixture into the prepared casserole dish and spread evenly
  • Place the dish in the preheated oven and bake for 15 to 20 minutes or until the top turns crisp golden and the middle becomes bubbly
  • Alternatively, you can also heat in a microwave on high for a few minutes
  • Let the dip sit for a minute and then serve warm
