Ingredients
  

  • 16 oz spinach, cooked and chopped
  • 1 tbsp butter, salted
  • 180 g double cream, (heavy cream)
  • 1/2 tsp fine sea salt
  • 1/4 tsp white pepper
  • 1/4 tsp nutmeg, freshly ground
  • 1/2 tbsp cornflour, (or cornstarch)
  • 1 tbsp water
  • 100 g Parmigiano Reggiano cheese, grated or cubed

Instructions
 

  • Squeeze out as much water as you can from the spinach using your hands
  • In a large saucepan over medium heat, combine the butter and heavy cream
  • When all of the butter has melted on the stovetop, stir in the spinach and mix
  • Season the mixture with salt, white pepper, and nutmeg
  • Keep stirring occasionally 
  • Bring the mixture to a simmer and then cook for another 3 to 5 minutes
  • In a separate small bowl, add the cornflour and the water 
  • Mix thoroughly until all the cornflour has dissolved and no lumps remain
  • Add this mixture to the spinach
  • Keep stirring until the starch thickens the spinach mixture (about 2 minutes)
  • Stir in the shredded Parmigiano Reggiano cheese
  • Taste the creamed spinach and adjust seasoning if required
  • Serve warm and enjoy!
