Kale Baby Food Recipe

Ingredients
  

  • 1 pc Small onion/shallot.
  • 1 bunch Organic kale (fresh or defrosted).
  • 4 pcs Eggs.
  • 1 tbsp Unsalted butter/Olive oil.

Instructions
 

  • Finely chop half an onion or one shallot. Sauté in a pan on medium heat with a dash of olive oil till the onion/shallot becomes translucent.
  • Finely chop the bunch of kale and add it to the pan. Stir till bright green.
  • Turn off the heat and allow this mixture to cool.
  • Crack four eggs in a separate bowl and whisk thoroughly. Add the cooled kale-onion mixture and stir to homogenize.
  • Reheat the pan on medium heat for a few minutes. Add a few drops of olive oil. Pour the mixture into the pan and leave to cook uncovered until the eggs start to set and curl upwards from the edges.
  • Gently flip the omelet to the other side using a spatula. Cover the pan and cook for a few more minutes. You can test if the omelet is done by inserting a knife in the middle; the blade shouldn’t have any runny egg on it.
  • Turn off the heat and let the omelet cool. Before serving, cut the omelet into small strips for your baby to relish.
