Take a big bowl and add Coconut Cream, Rum, Salt, Garlic, Jalapeno Pepper, Red Bell Pepper, Poblano Pepper, Cilantro, Shallots, and Mint. Mix them all.
Now take the Lemon, cut it into two halves, deseed it, squeeze the juice into the bowl, and pour in the Olive Oil.
Mix all the ingredients. You have two options here: Either marinate the Salmon in the same bowl, Place the salmon in a zip-lock bag with the marinade and refrigerate it overnight, or cover it with an airtight lid and leave it in the refrigerator overnight.
The next day when you're ready to eat, take it out and bake the Salmon at 350 degrees for 8 minutes.
Once baked, for another 2 to 3 minutes, broil it (this is to crips the salmon).
Once done, serve on a plate and garnish with Mint Leaves.
