  • 2 tbsp Coconut Cream.
  • ½ cup Rum.
  • 1 Jalapeno Pepper. Minced
  • 6 pods Garlic. Minced
  • 2 Poblano Peppers. Seeded and Diced
  • 1 tsp Salt.
  • 2 tbsp Cilantro. Minced
  • 2 Shallots. Finely diced
  • 1 Red Bell Pepper. Seeded and Diced
  • 2 tbsp Mint. Chopped
  • 2 tbsp Olive Oil.
  • 1 Lemon.
  • cup Mint leaves. Chopped
  • 2 pounds Salmon. Cut into 4-inch pieces



    Let's look at the step by step preparation of the Mojito Salmon Recipe;

    • Take a big bowl and add Coconut Cream, Rum, Salt, Garlic, Jalapeno Pepper, Red Bell Pepper, Poblano Pepper, Cilantro, Shallots, and Mint. Mix them all.
    • Now take the Lemon, cut it into two halves, deseed it, squeeze the juice into the bowl, and pour in the Olive Oil.
    • Mix all the ingredients.
      You have two options here: Either marinate the Salmon in the same bowl, Place the salmon in a zip-lock bag with the marinade and refrigerate it overnight, or cover it with an airtight lid and leave it in the refrigerator overnight.
    • The next day when you're ready to eat, take it out and bake the Salmon at 350 degrees for 8 minutes.
    • Once baked, for another 2 to 3 minutes, broil it (this is to crips the salmon).
    • Once done, serve on a plate and garnish with Mint Leaves.
