Take the tofu out of the pan and in the same pan, toss in all the chopped veggies ,and sauté them.
Take another bowl. Put the sugar, tomato paste, vinegar, water, soy sauce, and garlic powder in it and whisk well until combined. (You can thicken the sauce as you like).
Mix the sauce with the veggies and add the crispy tofu to it. Stir well to combine and simmer for 5 minutes or until the sauce thickens up a little.
Take it off the stove and garnish it with sesame seeds or chopped scallions.
Serve while hot!
