The Chew Salmon with Brown Butter and Lemon Recipe

  • 6 oz salmon fillets, 4 pieces (skin on)
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 1  shallot, peeled and finely chopped
  • 2 tbsp parsley, chopped
  • 1 lemon, juice
  • Salt and black pepper to taste


  • Wash and pat dry the salmon fillets as needed
  • Using a sharp knife, scour each fillet 2-3 times
  • Season each fillet with salt and pepper on both sides
  • Take a nonstick pan and place it on medium heat
  • Add the olive oil and 1 tbsp of butter to the pan 
  • Immediately add your salmon to the pan, skin side down
  • Cook for about 10-12 minutes until the skin is golden-brown and crispy
  • At this point, flip the salmon
  • Add the shallots and remaining 2 tbsp butter to the pan
  • Once the butter is bubbling, add the parsley and start basting the salmon with the sauce (tilt the pan and spoon the butter mixture onto the fish)
  • After basting for about 1 minute, add the lemon juice
  • Transfer the salmon to a serving plate, adding the remaining sauce on top
  • Enjoy! 

Tips for this recipe

  • For an additional kick, you can add cayenne or paprika powder to the seasoning step
  • For added flavor, you can add minced garlic to the olive oil and butter mixture in step 5
  • I don’t recommend making this recipe in the oven, simply because you won’t be able to baste it properly
  • I highly recommend using fresh salmon for this recipe, avoid frozen
  • If you’re using salted butter, decrease the amount of salt while seasoning the fillets
  • To check if your salmon is cooked, watch out for the color change! Cooked salmon changes from pink to an opaque white color
  • I do not recommend storing and reheating this dish
